Vacuum sealed and labeled meat: 8 small packs with 1 pound of ground pork, and two big packs with 3-4 lbs of chopped up pieces that we use for carnitas.

One of our favorite recipes for freezer meal prep is a spicy peanut ground pork stir fry. This freezes so nicely, and reheats beautifully. We freeze the stir fry in the two cup souper cube and then make rice on the night we reheat it, and it has been one of my consistent favorites.

However we are on our last frozen cube because we have been having a hard time finding ground pork at the store lately! I don’t know if it’s just in such low demand no one wants to grind it, or what, but there was only one thing to do.

I gave in and bought the meat grinder attachment for the Kitchen Aid.

I was pretty nervous about this purchase, honestly. Meat grinders sound really intense and intimidating, and also I have ADHD and spend a lot of time worried that I am going to cut my fingers off. Getting something designed to grind things into mush seemed somewhat dangerous!

But I watched a bunch of videos & did my research, and finally settled on getting the metal attachment. I was somewhat prompted by the fact I found it on sale for $69, also.

It was actually a lot more user friendly than I expected! It screwed right on, and within a few minutes we were off to the races. I did try to go a little too fast at first and ended up with clogged blades due to some of the fat, but once I chilled out we were in good shape.

Costco had a 17 pound pork shoulder butt on sale for $43, so we grabbed that and I made Mr. Bree chop it up into smaller pieces. Half of it we vacuum sealed in four pound bags so we can use them to make pork carnitas, which we always do in bulk. (Another of our favorite two cup souper cube meals!) The other half we turned into ground pork, so we now have eight one pound bags ready to go!

I guess the only question now is… what meat should we grind next???
